Foods Lemmon Poppyseed Muffin

Ingredients

  • 6 cups all purpose flour
  • 2 cups sugar
  • 4 T poppy seeds
  • 2 T baking powder
  • 1 t baking soda
  • 1 t salt
  • 3 cups plain whole milk yogurt
  • 4 T lemon juice
  • 3 T grated lemon zest
  • 4 eggs
  • 16 T unsalted butter
  • 1/2 cup sugar
  • 1/2 cup lemon juice
  1. Whisk flour, sugar, poppy seeds, baking powder, baking soda, and salt in a large bowl
  2. in a separate bowl whisk yogurt, lemon zest, and eggs until smooth. Gently fold yogurt fixture into flour mixture until combined. Fold in melted butter but make sure not to overmix (if you over mix, the muffins will be dense)
  3. Divide batter evenly among prepared muffin cups and bake at 375ยบ for 20-25 minutes, or until golden brown.
  4. While muffins are baking simmer sugar and lemon juice together in a sauce pan over medium heat until it turns into a light syrup (about 3-5 minutes)
  5. Brush muffins with the syrup and sprinkle with sugar
  6. let muffins cool for 10 minutes before serving
